Creatine will not turn to fat. It is not possible.
Drink your protein shake regardless of if you miss a workout or not. In order to keep a positive nitrogen balance (stay growing) you need a regular supply of protein. Every 2 or 3 hours is ideal. Remember your body needs energy to simply stay alive. Depending on your size (I imagine you're larger than average), your body probably needs 2000 calories a day just to perform basic functions like pumping blood to your muscles and breathing.
You sound like you are too worried about getting chubby. Just keep track of your progress and adjust your diet/routine accordingly.
