Cottage Cheese Spinach Chicken
Ingredients
1(10ounce) packaged frozen chopped spinach (thawed)
1/2 yellow onion (sweeter)
1 cup cottage cheese
4 skinless boneless breast
2 tbls Cajun-style seasoning (or make your own, paprika, celery salt, black pepper,chile powder)
4 tbls olive oil
Directions
Pre heat oven to 350
Squeeze excess water out of the THAWED frozen spinach, in a large bowl mix spinach with the chopped onion (I finely chop, dont like big onion chunks, would rathe just taste the flavor of the onion) and cottage cheese. Pound the chicken breast( just put in plastic wrap or bag and pound with a pot if you dont have the proper tool) and season. Put the spinach, cottage cheese mixture in the center of the breast and fold over. Secure with toothpicks and place in a lightly greased baking dish. Drissle each breast with tablespoon of olive oil and bake at 350 for about 25 minutes.
Goes great with mixed veggies, baked potatoe or even rice.
As what Emeril would say, "if you want to kick it up a notch", cook up some turkey bacon almost thuroghly, chop up and add to the cottage cheese mixture. Will completly cook in oven for the remaining 25 minutes....Da extra flavor is awesome.
