you didn't give portions. But based on what I see it seems like you've got your body in starvation mode and holding on to every ounce of weight it can.
There was a reason the smart people that designed the ckd diet and that type of eating put in re-feed days. One reason is to keep the muscles full so you can keep lifting, so you gain more muscle size, so your metabolism expands not contracts.
The other reason is so that your body doesn't go into starvation mode, so your metabolism doesn't slow, so you can lose weight, fat weight not muscle weight. How much muscle do you think you have lost eating this way.
You need to start introducing carbs back into your diet and get your metabolism back. It's gonna take awhile but my personal opinion is that you have taken this to an extreme.
