I think a bulking diet full of fruit and very low on fats is not the best idea. For:
1) fat-starvation, as I call it, can lead to long term fat gain especially when fat is added back to the diet
2) lack of fat intake can be very unhealthy in the short and long term.
3) fruits (fructose) is stored in the liver - once the liver is full (about 150g) then all the fructose is stored as fat - especially with so much fruits and carbs in the diet
4) the meal combinations are not adequate
Overall, I this if one was to cut out the massive amounts of fruits and add more fiber and quality protein and some Omega fats - the diet would be great.
