Chili-Beer Roasted Chicken
1/2 cup plain lowfat yogurt
1 teaspoon chili powder
1/2 teaspoon basil
1 Can of Beer
1 teaspoon paprika
1 teaspoon hot pepper sauce, or to taste
2 cloves garlic, minced
1 roasting chicken
In a large glass bowl mix together yogurt, chili powder, hot pepper sauce, and garlic. Rub over chicken and let sit covered over night.
Preheat the oven to 500 F. (Works awesome on the BBQ) Open up beer, drink about a quarter of the beer, burp, fart then place chicken over the can. Stand up on baking pan (to catch the juices) or if on the BBQ place right on the grille. The beer can will act as a stand. Place in the oven or on the grille and reduce the temperature to 350 F and roast for about 1 1/4 hours.
The beer can will boil and smoke the beer flavors into the chicken and pull in the spices from the outside rub. This bird is the bomb, trust me.
