I've been trying some new recipes for the new year..... this one I just made up on my own and threw ingrediants into the crockpot.
6 boneless chicken breasts
4 Zucchini (sliced)
1 onion (diced)
2-3 cloves of crushed garlic
4 pinches of cumin (you can use less... I just like alot of comino for spice)
4 oz diced green chiles
24 oz green chile enchilada sauce
1c water
fresh cilantro (just get a small handful and toss it in chopped closer to the 8th hour of meal being cooked)
Toss all ingrediants into the crockpot and slow cook for 8hours. This makes a great stew and can be served over some spanish style rice or better yet use the chicken and make some soft tacos. This came out to savory and delicous to not share with you all.

Plus it's sooo simple to make!
