Hey, I was givin a big bag of sweet onions and was wondering about some ideas on how to prepare a great appetizer, any suggestions?

1 (8- or 10-inch) non-stick skillet (important!)
About 1/3 cup shredded Monterey Jack cheese
1 (8- or 10-inch) flour tortilla
Pesto (optional)
Half of an Oso Sweet or other sweet onion, cut into 1/4-inch thick rings
Sour cream
Optional garnishes: diced tomato, guacamole, grilled and chopped chicken breast

Heat a non-stick skillet over medium-high heat until it becomes very warm to the touch. (Do not try this recipe with anything other than a non-stick skillet because it simply won't work!) Sprinkle the shredded cheese directly onto the surface of the pan, spreading it out to cover the approximate diameter of the tortilla. As soon as the cheese begins to melt, lay the tortilla on top of the cheese and press it gently into the melting cheese (this helps the cheese adhere to the tortilla). Let the tortilla sit, undisturbed, in the pan for about 20 or 30 seconds, then gently pull up an edge to see how the cheese is doing. When the cheese has turned golden and is adhering completely to the bottom of the tortilla, flip the tortilla so the cheese-coated surface is on top and the plain surface is on the bottom. (If you've got tough fingers, you can do this by hand. Tender folks may want to use a spatula.) Continue cooking for just a moment to brown the plain side, then slide the tortilla onto a plate.

If using pesto, then spread a thin layer over the browned cheese surface. Now arrange the onion rings on one half of the tortilla, followed by a layering of sour cream. Finally, add layers of any or all of the additional garnishes. Fold the quesadilla in half and cut into two or three wedges. Enjoy!

3 tablespoons fresh lime juice
1/2 tablespoon finely chopped jalapeno pepper
Salt, as needed
2 tablespoons vegetable oil, such as canola
1-1/2 pounds medium raw shrimp
1 lemon, sliced
1 large, firm-ripe avocado, about 8 ounces
1 Oso Sweet onion, quartered, then sliced
3 tablespoon chopped, fresh cilantro
Tortilla chips, as needed

Whisk together lime juice, jalapeno, and 1/4 teaspoon salt. Whisk in oil; reserve. In a saucepan, cover shrimp and lemon with water. Bring to a boil; turn off heat. Let shrimp stand for 3 minutes. Drain, then cool quickly in iced water; drain immediately. (Do not let shrimp soak; they will absorb water.) Peel and devein shrimp; cool to room temperature. Cut avocado into 1/4-inch dice; fold into shrimp with reserved dressing and onion. Shrimp may be cooked up to the day before; dish may be assembled several hours before serving. Just before serving, fold in cilantro. Accompany with tortilla chips.

Yield: 8 appetizer servings

INGREDIENTS:

* 4 to 6 Vidalia or other sweet onions, about 4-inch diameter
* 1/2 cup cornstarch
* 1 1/2 cups flour
* 1 teaspoon garlic powder
* 2 teaspoons ground paprika
* 1 teaspoon salt
* 1 teaspoon pepper
* 24 ounces beer
* .
* Seasoned Flour
* 2 cups flour
* 4 teaspoons paprika
* 2 teaspoons garlic powder
* 1/2 teaspoon pepper
* 1/4 teaspoon cayenne
* .
* Chili Mayonnaise
* 1 cup mayonnaise
* 1 cup sour cream
* 1/4 cup chili sauce
* 1/4 teaspoon cayenne pepper

PREPARATION:
Cut about 3/4-inch off the top of onion and peel. Cut onion into about 12 vertical wedges but do not cut through bottom root end. Remove about 1 inch of the center "petals" of onion. Immerse onion in ice water while preparing batter and flour.

Combine next 6 ingredients in a bowl; blend well. Stir in beer; blend well.

In another bowl, combine seasoned flour ingredients; stir to blend well.

Dip onion in seasoned flour; shake to remove excess flour. Separate petals and dip into batter, spooning batter over all until well coated. Let excess drip back into bowl. Gently place battered onion in fryer basket and deep-fry at 370° for about 1 1/2 minutes. Turn over and fry for about 1 1/2 minutes longer, or until golden brown. Drain on paper towels. Place onion upright in shallow bowl and remove center core with circular cutter or apple corer. Serve hot with Chili Mayonnaise.

Chili Mayonnaise:
Combine Mayonnaise, sour cream, chili sauce and cayenne; blend well.

5 sweet onions (like Vidalias) or a combination of sweet and red onions (about 4 pounds)
3 tablespoons butter
1 teaspoon salt
2 cups white wine
10 ounces canned beef consume
10 ounces chicken broth
10 ounces apple cider (unfiltered is best)
Bouquet garni; thyme sprigs, bay leaf and parsley tied together with kitchen string
1 loaf country style bread
Kosher salt
Ground black pepper
Splash of Cognac (optional)
1 cup Fontina or Gruyere cheese, grated

Trim the ends off each onion then halve lengthwise. Remove peel and finely slice into half moon shapes. Set electric skillet to 300 degrees and add butter. Once butter has melted add a layer of onions and sprinkle with a little salt. Repeat layering onions and salt until all onions are in the skillet. Do not try stirring until onions have sweated down for 15 to 20 minutes. After that, stir occasionally until onions are dark mahogany and reduced to approximately 2 cups. This should take 45 minutes to 1 hour. Do not worry about burning.
Add enough wine to cover the onions and turn heat to high, reducing the wine to a syrup consistency. Add consume, chicken broth, apple cider and bouquet garni. Reduce heat and simmer 15 to 20 minutes.
Place oven rack in top 1/3 of oven and heat broiler.
Cut country bread in rounds large enough to fit mouth of oven safe soup crocks. Place the slices on a baking sheet and place under broiler for 1 minute.
Season soup mixture with salt, pepper and cognac. Remove bouquet garni and ladle soup into crocks leaving one inch to the lip. Place bread round, toasted side down, on top of soup and top with grated cheese. Broil until cheese is bubbly and golden, 1 to 2 minutes.
