PB diet and Carb Sensitivity

I plan on trying the PB Diet but someone told me that on such a carb-restrictived diet I would become carb sensitive and once I returned to a normal diet my body would react differently to carbs. Is this ture? and what exactly is carb sensitive?

I found that reduced carbohydrate diets were better for my body, and I retained less water, but when I did eat more carbs, I feel more like shit than on the Keto type diets.

FWIW - My carb up days consist of about 400g Carbs 200g protein and 40-60g fat all coming from CLEAN sources, i.e. NO FAST FOOD - Pasta, potatoes, oatmeal, chicken, etc. along with at least a gallon of water and I have yet to step on the scale and see a weight gain the day after.

I'm totally addicted to clean carbups now. Screw fast food
