Baked Chicken with a Kick!

Okay, I don't have a specific recipe for this, but it's really good, so you'll have to try it like I do, everything to taste and done by eye.

I take chicken breast (stabbed repeatedly with a fork) put salt, pepper, Everglades Seasoning (not available everywhere but still good without it), Liquid Smoke and Chipotle Sauce to taste, then just enough of your favorite BBQ sauce to cover top of chicken then throw in some onion chunks and garlic cloves and bake for an hour. (350 F)


I know it doesn't sound like much, but it's so good, and it stays so juicy. I made it today and took a picture for everyone. (I didn't have any garlic though.)

I can only eat half for one meal so dinner will be the other half probably with some brown rice.

Some additional tips:

The juices from the chicken thin the bbq sauce out, so it all bakes through the chicken, that's the purpose of stabbing the chicken with the fork. This also makes the sauce you see around the chicken in my pic, no need to add additional bbq sauce.

I always put the Liquid Smoke and Chipotle directly on the chicken before the BBQ sauce so it absorbs into the meat alone first.

If you've never used liquid smoke before, know this: A little really does go a long way.

Last one, remember there are 2 sides to every piece of meat. I see a lot of people only season one side when they cook, never can understand why. I start with my chicken one way, season it, coat it with bbq then turn it over and repeat. Then, when you throw the onion and garlic in pick the meat up again so some gets underneath. (and yes, do it in that order so the sauces have already coated the bottom of the baking pan when you add the onions/garlic) You want the meat to get flavors all through it, not just down from the top.

Oh, for leftovers... though this one isn't as healthy.. start with premade pizza shells, add some bbq sauce, top with shredded or cubed chicken, and some colby/cheddar cheese... BBQ Chicken Pizza!! Bake about 10-12 min. at 350 F.

The smell of chicken gags me. And the liquid smoke i got from the US just runout today. Would it be good with beef?

I don't know why it wouldn't be good on steak .. I'd probably use steak sauce instead of BBQ sauce though.
