Has anybody here ever used yogurt as a marinade or filler for your meats? I'm wondering about the soak time.... how long would be a good time to let the meat sit in the marinade before it gets tough? Normally when I use wine or vinegar marinades I dont let my cutlets sit any longer than 30-45min.... any thoughts if yogurt can hold up longer than that?

i think it might be the acidic enviroment of the wine and vineger that makes the meat tough, as yogurt isnt that acidic i should imagine the meat should be fine for quite some time, as for recipes indian cookery uses quite alot of yogurt
