Low Carb Chicken Enchiladas

1 bag Shredded Monterey Jack Cheese

1 bag shredded Cheddar Cheese

20 ounces Cooked Chicken Strips

1 (8 oz.) can Red Enchilada Sauce

1 can sliced black olives

1 Bunch green onions

1 large white onion

Whole Wheat Low Carb Totrillas


Blanch tortillas by dipping them one at a time into boiling water for 2-3 seconds. Lay tortilla flat and place 2 ounces of cooked chicken strips inside. Sprinkle one ounce shredded Cheddar and one ounce of shredded Jack cheese. Top with white diced onion. Roll tortilla and place seam side down in a casserole pan. Place in oven and bake for 20 minutes at 350 degrees, (an internal temperature of 160 degrees.) Remove from pan and pour remaining sauce from heated pan onto the enchiladas. Garnish with diced green onions and sliced olives.

I just made these and WOW. They are sooooooo good. Only thing I did different was that I put the sauce and a cheese on top before I put it in the oven. They are soooo good.

I'm going to do a different recipe every week, and I will let you know how they go.
