Filet Mignon with Tomatoes and Rosemary

2 tsp soy sauce
1 1/2 tsp Dijon mustard
1 1/2 tsp chopped fresh rosemary
or
1/2 tsp dried and crumbled
1/8 tsp garlic powder
2 tomatoes, finely chopped
2 tsp olive oil
4 filet mignons (6 oz each), 1 1/2" thick
1/4 tsp salt
1/2 tsp ground black pepper


1.Preheat the oven to 400'F

2.In a bowl, combine the soy sauce, mustard, rosemary, and garlic powder. Fold in the tomatoes.

3.Heat the oil in a large, oven safe, heavy skillet over high heat. Season the meat with the salt and pepper. Place it in the skillet, and deeply brown the first side, 4 to 5 minutes. Turn, and brown the second side for 30 seconds. Place the skillet in the oven, and cook until meat thermometer registers 145'F for medium rare, 12 to 14 minutes. Serve topped with tomatoes.
