Roast Beef w/veggies and garlic sauce

Ingredients

2-1/2 lbs. roast eye of round lean
2-1 /2 tablespoons canola oil
1 medium head of garlic
2 medium garlic cloves, minced
1/8 teaspoon salt
1 medium head of garlic
1/8 teaspoon pepper
3/4 cup fat-free sour cream
10 medium carrots
1 tablespoon low-fat, 1% milk
9 large red potatoes
10 slices light wheat bread


Preparation


Preheat oven to 325°. Rub beef with a garlic clove cut in half (I like to crush a few cloves and rub all over, it's a recipe X, dont get excited lol ) then sprinkle with salt and pepper. Place beef on a rack in a roasting pan.

Cut up carrots and potatoes and add them to the roasting pan. In a small bowl, combine oil and minced garlic, then brush beef with garlic mixture. Place whole garlic bulb in a small baking dish, and set alongside roasting pan in oven.

Roast beef in oven for 50 minutes, or until cooked through. When finished cooking, remove beef and vegetables from pan and place them in a large bowl.

To prepare sauce, in a small bowl combine roasted garlic, sour cream, and milk, mix well. Cut beef into slices and arrange on a serving plate.

Serve immediately with sauce, vegetables and 2 slices of bread, per person.
