Turkey Chili Meatloaf and Potato Bake

1 1/2 pounds ground turkey
3/4 cup salsa
1 tablespoon chili powder
1 egg, beaten
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cups prepared hot mashed potatoes
2 cups shredded taco blend cheese


(HINT/NOTE) Good idea to make the mashed potatoes while the meatloaf is cooking. Just use Instant Mashed.

Directions:

1. Preheat oven to 375° F. Combine ground turkey, salsa, chili powder, egg, salt and pepper until blended. Press turkey mixture into a 9-inch square baking dish.

2. Bake 25 minutes until done and juices run clear. Drain off fat.

3. Combine potatoes with 1 cup cheese. Spread evenly over meatloaf. Sprinkle with remaining cheese. Bake 5 minutes until cheese melts.
