Xmas holidays & avoiding all the carbs

In a panic after I discover we are having lasagna for Christmas Eve dinner, I went looking for low carb holiday recipes. I'm sure there are literally "butt-loads" of recipes & websites out there, but I found two (same author) that had some good stuff on them, especially low carb desserts:

If carbs are a serious problem, I do think there are low carb pasta sauces out there and there should be a Keto Lasagna noodles out there or something equivalent; otherwise its eggplant to the rescue. Personally, I'd say just go with eggplant, lots of No Fat Cheese (mostly protein), homemade pasta sauce from the tomato, and lots of beef, and then eat a small portion of the lasagna.

I tried messing w/ eggplant once in 1989. It was horrible. It took months of therapy to get over it. (j/k). I'm just not a big pasta/tomatoe sauce person in general. But in those moments of obligatory consumption, one does experience panic.

Therapy to get over eggplant? I must be a true psychotic. I eat deep fried egg plant with a hot and spicy horseradish tomato dipping sauce all the time. Time for my meds again.
