Yam and Parsnip Curry

1/3 cup butter
1 tbsp turmeric powder
2 tbsp freshly ground coriander
2 tbsp freshly ground cumin
1/2 tsp cayenne powder(or to taste)
1 tsp salt

(If you don't have the individual curry spices on hand,substitute them with Bengal or Madras curry powder)

3 cups chopped leeks
1/3 cup grated fresh ginger
8 cups parsnips,cut in chunks
10 cups yams,cut in chunks
3 cups water

In a large pot,gently saute the spices and salt in butter for 1 minute.
Add leeks and ginger and saute for a few more minutes.
Then add the parsnips and 1 cup of water.
Simmer for 6 minutes,then add the yams and remaining water.
Simmer 6 minutes more,or until the yams are tender,stirring occasionally to prevent sticking.

Serves 12

The orange yams and white parsnips make a colorful and wonderfully tasty dish that is good enough to serve at a party.Serve this curry dish by itself,with a small green salad.a serving of basmati or jasmine rice,or a side dish of papaya.Yum!
