Fried Rice

Fried Rice only not so fried.

1 chopped onion
egg beaters (or egg whites)
brown rice
chicken (cooked chicken breast or tenders that's been chopped up into small pieces)
soy sauce
any other veggies you like (carrots, broccoli, whatever)


In a wok or non stick pan heat up a little olive oil on high heat and add in the onions, cook so they brown, then push them to the side of the pan and scramble the eggs and once they're cooked add in the chicken and other veggies. Once everything's hot add in the brown rice, drizzle with soy sauce and mix well. If you want it to brown, let it sit on the high heat for a minute or two without mixing so the heat kind of toasts the rice, then mix and repeat until it's as dark as you want.
