Basa

[Puddles]

Basa is my favorite fish. Mild in taste and it cooks quickly, nice and flakey.

1 chopped onion
3 basa fillets
a few sliced black olives
a roasted red pepper sliced into thin slivers
capers (they're salty so don't use too many, 1-2 tbsp is good)
lemon juice (either just a light touch or 1/4 cup, depending on your tastes
a cup of chicken broth or bullion
a tbsp of olive oil


Brown the onion in the olive oil, then add the basa on top. Cover and cook for a few minutes, then flip the fish over and add in the olives, pepper slices, and capers on top. Cook for another couple of minutes covered, then add in the chicken broth and lemon juice, gently mixing everything together. Bring it to a boil for a minute uncovered and it's done. Some fresh ground black pepper is nice with this. If you're eating this with brown rice, drizzle the extra sauce onto the rice.
