Chicken Adobo:

[CHIQUITITA]

I finally convined my friend to give me his mamas recipe... another dish that is soo tastey and easy to prepare!

-1lb chicken breast cut up in small pieces
-1/2 c. vinegar
-1/2 c. water
-1/4 c. soy sauce
-6-8 cloves of garlic (crushed/minced)
-4 pieces of bay leaves
-salt n pepper to taste
-4 peppercorns (I omitted these as I didnt have any handy)
-add 3 tbsp of olive oil (This is to be added after the chicken is cooked)

Place all ingrediants in a pot and let boil for 5min without stirring. Then simmer for 25min until chicken is fully cooked. Seperate the chicken from the sauce and saute the chicken in the olive oil browning it. Proceed to add sauce back onto chicken and heat for 5min. Serve cooked chicken over steamed brown rice.

I should add that pork, beef, or turkey tenderloins can be interchanged instead of using chicken. Also this meal is best if eaten the day after it's made.:inlove The flavor is soo much more intense!

the vinegar your using, its rice vinegar right? i absolutely love chicken & pork adobo. and you can make it in like twenty minutes. good recipe chiq. hope your doing good

I have a very good friend hat owns a big Mexican restaurant in my area, that has the best pork adobo!! But he won't give me the recipe for it as its an old family secret~!!!
Now there sauce is a red color almost like a red chilie color, but in no way tastes like red chilie!! I'll have to give this a try!!!

Hi OLDMMA.... Sorry it took soo long to respond, but to answer your question I used regular distilled vinegar.
