Sinless Lemon Meringue Pie

I tried this recipe this morning and it's sooooooo goood!

6 Eggwhites
1 tbsp Splenda
1 tsp Vanilla extract
1 package Sugar-Free Lemon Jello Powder

Beat eggwhites until stiff; add splenda and vanilla extract and beat again making sure completely mixed and still stiff.

Heat medium hot non-stick fry pan. Spread eggwhite mixture in pan and sprinkle sugar-free lemon jello powder on mixture. Cook in pan for about 5 minutes.** Bottom should be brown and top should be fluffy and firm and lifts easily from pan.

**the original recipe says to cover the pan and let cook for 2-3 minutes and then uncover and cook 2 minutes more

How does the powder taste? Does it cook into the egg mixture? I am having trouble imagining this one. Where's the pics?

The bottom part becomes a little hard with a fluffy top.... I know it's not the same but you absolutely dont miss the crust. This is really a great alternative for the real thing though.

I put the powder in after I poured the eggs into the pan and the jello just dissolves into the whites.

It went a little over the edge but did'nt spill out of the pan.... I guess I should have used a bigger one.

Lol, it still looks good, you should switch up your jello flavors.. lime, strawberry, orange.. I bet it would be good with all of them.. and I will be trying this in a day or two.

Okay girl.. I just tried it & it didn't work out so well. LMAO!! I think I had the pan too hot .. I ended up with what smelled like fried eggs on the bottom and the merangue never set at the top. I was using Strawberry Kiwi Jell-O though, and it sure looked yummy. So, when I get some more eggs I'll be trying again!!

Awww, I'm sorry it did'nt turn out for you but did you beat the eggs until they became stiff??? That's really the trick in getting all the fluff. I beat the hell out of those eggs and for a reeeeeallly long time too. And the pan does'nt need to be soo hot, I almost burned mine too. Give it another try though I'm sure you'll like it. I was able to cut teasily and froze the remaining uneaten pieces... I dont know how that will turn out when I'm ready to eat it again. Hopefully it does'nt get destroyed.

Girl, you have no idea how much I was laughing. It was like fried egg on the bottom and a big icky sticky mess on top. It was quite humorous.

I am pretty sure the pan was just too hot and then it didn't cook long enough. No worries, I will try again. And yes, I used the beater and beat the whites like I would for merangue, into stiff peaks. (Cooking/baking is a passion of mine, so I know that part was right)

Once I get more eggs I will try again and let you know.
