Pumping Iron Special

I stole this recipe but it sounds really good & easy to make. Check it out :

1.3 lbs lean ground turkey
1 small onion (diced)
4 eggs, beaten (whisked in salt & pepper & a little tobasco)
3 cups chopped raw spinach
1 cup cooked brown rice
salt & pepper

- Sautee the ground turkey in olive oil & season with salt & pepper.
- add diced onion.
- add egg mixture & keep stirring with wooden spoon to combine the eggs right in & keep the turkey moist.
- add the spinach in a few bunches at a time.
- salt & pepper again for the spinach.
- at the end add the brown rice.
