Herb-Stuffed Trout

Ingredients
4 each Whole Trout, cleaned
1 C Fresh Bread Crumbs
1/4 C Fresh Tarragon, ****ped
1/4 C Fresh Chives, ****ped
1/4 C Fresh Parsley, ****ped
Coarse Salt and Freshly Ground Black Pepper
3 each Shallots, minced
2 TBSP Olive Oil
1 C Dry White Wine
Sprigs of fresh herbs

Cooking Instructions
Preheat oven to 375*
Dry the trout inside and out with paper towels.
In a bowl, mix together the bread crumbs, tarragon, chives and parsley. Season and stuff into the trout cavities. Secure openings with toothpicks and place in a greased, flame-proof baking dish.
Brush with olive oil and bake for 15 minutes or until fish flakes. Remove to a warm serving platter.
Pour wine in the baking dish; add shallots and bring to a boil over high heat, scraping the bits off the bottom of the dish. When shallots are softened, about two minutes, pour over fish and garnish with sprigs of fresh herbs.

Additional Tips
Remember to remove toothpicks before serving. Add some lemon slices for a little color.

Sounds like a good one. They will be stocking the lakes and ponds soon and if i can get my fishing skills going, which consist of me laying on the lounge chair till my rod starts wiggling. then I will try your recipe or I could just do what I do most of the time after a day of fishing, go to the market and buy one.
