rustic Greek salad

dressing (mixed together)
2-3 tbsp x-tra virgin olive oil
2 tbsp of lemon juice or sometimes i use & 1 tbsp Balsamic vinegar
ground black pepper & pinch of salt (optional)

ruf***e (lettuce,kale,spinach,romaine....)
****ped tomato(es)
****ped cucumber(s)
sliced green, yellow & red bell pepper(s)
finely sliced red onion
handful of black olives

topping
crumpled Feta cheese
very finely ****ped parsley, garlic & a little lemon zest

you get the benefits from olive oil while getting lots of fiber, antioxidants & beta carotene.
prep time is under 10 mins & it's great w/ a piece of fish (salmon) or on it's own.
