1 green bell pepper
1 orange bell pepper
1 yellow bell pepper
1 red bell pepper
1 cup mushrooms
1 cup cherry tomatoes
1 med size zucchini
1/2 red onion
2 cloves fresh pressed garlic
balsalmic vinegar
extra virgin olive oil
cut mushrooms, zucchini, and onion into bite sized pieces, put on kabob sticks

put all vegetables onto top rack of BBQ, grill peppers till black, grill kabobs till tender

peel off black skin on peppers, and slice into bite size pieces, this really brings out the sweet taste in the peppers.

mix small amount of balsamic vinegar, oil and garlic in bowl... set aside, make just enough to lightly flavor the veggies.

put all vegetables into large salad bowl, pour on dressing toss and enjoy. (salt and pepper to taste)

dressing amount depends on how many people are being fed. This salad can be eaten cold but is not as tasty.
