1 salmon fillet (12 ounces)
2 tablespoons lemon juice
1 teaspoon extra-virgin olive oil
3 sprigs fresh marjoram
3 sprigs fresh Italian parsley
1 teaspoon grated lemon rind
lemon wedges

Rinse and dry the salmon. remove as many bones as possible. Place the salmon on a piece of foil about 2" larger than the salmon. In a cup, whisk together the lemon juice and oil; drizzle over the salmon. Place the marjoram and parsley on the salmon and sprinkle with the lemon rind.
Put the salmon on a medium-hot grill or broil about 5" from the heat. Cover the grill and cook or broil for 10 minutes, or until the fish turns opaque and just begins to flake when gently pressed.
Transfer the salmon from the foil to a work surface. Remove and discard the marjoram and parsley. remove the skin by sliding a sharp knife or spatula between the skin and the fish. To serve, garnish with lemon wedges.
