This is a great for that low carb meal.

You will need:
1 seasoned chicken breast, grilled or baked
2 cups fresh spinach
1/4 cup onions
1/4 cup carrots

Combine all ingredients into a large Tupperware container.

Salad Dressing:
1 cup low sodium soy sauce
1 tablespoon fresh ginger
2 garlic cloves
2 tablespoons flax seed oil
3 tablespoons creole mustard

Combine in blender. Blend until you have a smooth consistency.

Once you have your salad dressing made, pour desired amount over spinach mixture, put the lid onto the container and shake until everything is covered.
